Asked about the philosophy behind De Vrienden van Jacob, Executive Chef Alain Alders answers: "To begin with, we choose for fair trade and fair flavours: we buy our ingredients as much as possible from producers who gain a fair price for their products. For instance, our table water is also a conscious choice. Most certainly all of our dishes are seasonal and regionally driven, in which context I have a preference for light dishes without dominant ingredients."

What are other characteristics? Alders: "Love for the art of cooking, passion and personal care for your guests, your colleagues and your suppliers. I just could not do it any other way. Besides that the combination of wine and food is very important. Each week we have an internal wine tasting experience with our sommelier who acts as a coach. Subsequently we attach great value to the total experience of our guests including the atmosphere, the service and the warm ambiance. One does not earn a Michelin star just for serving top quality food and beverages, it is all about the total experience being delivered. People must feel immediately at home and enjoy!! "
